New year is the perfect time for self-reflection and making a resolution but I know in 2016 I am going to find myself doing the same things I have done every year- Not keeping up with any RESOLUTIONS!

So, instead of making an unrealistic list of things, (like vowing to hit the gym regularly) I want to make a list of things I should worry less about!

Number twoEating healthier and diet.
Everything that is consumed during the holidays is filled with sugar, oil and cheese. Although we swear to swap our diet with salads and proteins with a side of spinach it all sounds good till mid Jan. No point in stretching this resolution too far as everything consumed in MODERATION sounds alright to me!

No matter where you are in your life, there will always be someone with a nicer house, fancier car/ clothes/ body/ life, the list is endless.  Forget the comparisons and focus on what you have.

Stir-Fry

 

Stir Fry

Ingredients:
1 cup of Boneless Skinless Chicken Breast, thinly sliced (optional)
4 cups of Raw Mixed Veggies chopped into bite size pieces
5 Garlic cloves, minced
1 Tbsp of Chopped Fresh Ginger
2 Tbsp of Soy Sauce
2 Tbsp of Water
1 Tbsp of Oyster Sauce
Vegetable Oil
1 tsp cornflour (optional)

There are so many things to love about Stir-Fry – It is quick, easy and delicious!

Method:

1) Heat a large skillet or pan on high heat and add oil and allow it to get hot. Add the chicken and let it cook for a few minutes or until pretty much fully cooked through, remove the chicken and set it aside.

2) Add more oil to the hot skillet/pan and to that add in part garlic and ginger. Sauté for about a minute and add in the veggies. In the meantime, prepare the sauce by whisking together the soy, water and oyster sauce.

3) Cook the veggies over high heat for about 4 – 5 minutes, add the chicken back in along with the remaining garlic and cook it for about a minute.

4)To that, add in the sauce and cook together for about a minute or until the sauce thickens. If you feel that your sauce hasn’t thicken to your liking add one teaspoon of cornflour.

5) Serve hot with some steamed rice.
